Most wine bought today is drunk within a week of purchase, and most of it is made to be. But a proportion of Australian red wine genuinely improves with time, and the difference between a bottle stored well for five years and the same bottle stored badly is not subtle. One becomes a better version of itself. The other becomes undrinkable.
You do not need a purpose-built cellar to store wine properly. You need to understand which four variables matter, in what order, and where the common household mistakes are.
The four variables that matter
1. Temperature stability, before temperature itself
The textbook answer for long-term storage is 12 to 14 degrees Celsius. The more useful answer is that stability matters more than the exact number. A cupboard that sits steadily at 18 degrees year round will preserve wine better than one that swings between 12 and 25 across the seasons.
The reason is physical. Wine expands and contracts with temperature. Every swing pushes liquid slightly against the cork and then draws air back past it. Repeat that cycle enough times and the seal is compromised, the wine oxidises, and no amount of careful handling afterwards recovers it.
Warmth also accelerates chemical development. Wine stored consistently at 20 degrees ages roughly twice as fast as wine at 13. That is not automatically a problem for a bottle you intend to drink in two years. It is a serious problem for one you intend to keep for ten.
Sustained heat above 25 degrees is genuinely damaging. Fruit flavour flattens, the wine takes on a cooked, stewed character, and in severe cases the cork pushes up against the capsule.
2. Darkness
Ultraviolet light degrades the phenolic compounds that give wine its colour, structure and aromatic complexity. The fault it causes has a name, lightstrike, and it produces a flat, damp, slightly sulphurous character.
Dark glass provides partial protection, which is exactly why serious red wine is bottled in it. Partial is not complete. Keep bottles out of direct sunlight entirely and away from strong artificial light. A closed cupboard solves this problem for free.
3. Humidity
Aim for 50 to 80 percent relative humidity. Below that range, corks dry out from the outside, shrink and lose their seal. Above it, labels grow mould, which does not harm the wine but destroys resale value and looks unpleasant.
For most Australian homes this is the least urgent variable. Very dry indoor environments, particularly rooms with constant air conditioning or heating, are where the risk sits.
4. Stillness
Constant low-level vibration disturbs sediment and is thought to accelerate chemical reactions in the bottle. The practical implication is narrow but worth knowing: do not store wine on top of a refrigerator, next to a washing machine, or near anything with a compressor that cycles on and off all day.
Bottle orientation
Store cork-sealed bottles on their side. The wine keeps the cork moist and swollen against the neck, maintaining the seal.
Screw-capped bottles, which is a great deal of Australian wine, do not require this. They can be stored upright without any risk to the seal. Australia was an early adopter of the screw cap for good reason: it eliminates cork taint entirely and delivers far more consistent bottle-to-bottle results. Wine ages perfectly well under screw cap, simply on a slightly slower oxygen curve.
Where to store wine in an ordinary house
Good: an interior cupboard away from external walls, the bottom of a wardrobe on the cool side of the house, under a bed in an unheated room, or a dedicated wine refrigerator if you are storing enough to justify one.
Bad: the kitchen, which is the warmest and most temperature-variable room in any house. On top of the refrigerator, which combines heat and vibration. A garage or roof space, where summer temperatures routinely exceed anything wine survives. Any windowsill.
The single most common storage mistake is a decorative wine rack in a kitchen or living room. It looks appropriate and it is the worst place in the building.
Which bottles are worth cellaring
Time does not improve wine as a general principle. It improves wine that has the structural components to develop, and those components are tannin, acidity, concentration of fruit and balanced alcohol. A wine without them simply gets older.
Full-bodied red wine with firm tannin is the main category worth holding. Structured Cabernet Sauvignon and Petit Verdot are the strongest candidates in Australian red wine, with substantial Shiraz close behind. Among our own range, the Larry No 10 Cabernet Sauvignon, the Mac Ceallaigh Petit Verdot and the 2018 Reserve Shiraz all carry the kind of structure that rewards patience.
Recently released wines built for the long term, such as the Oz Stamp Shiraz Limited Edition from 2025, are cellar candidates by definition. They are not at their best in the first year.
Wines to drink rather than store: most white wine outside a small group of age-worthy styles, everything in the sparkling category made for immediate freshness, and any red that already tastes soft, fruity and open. If a wine gives you everything on the first sip, it has nothing held back to develop.
Timing: when to open the bottle
There is no formula, but there is a reliable method, and it costs one extra bottle.
Buy three of anything you plan to cellar. Open the first within a month and write down what you find, specifically the tannin, the fruit intensity and the length of the finish. Open the second two or three years later against those notes. The direction of travel tells you what to do with the third.
Rough guidance for Australian red wine held in reasonable conditions: medium-bodied styles reach their window at three to five years from vintage, structured full-bodied styles at five to ten, and only a small number of top examples continue to improve past fifteen.
Signs a wine needs more time: aggressive drying tannin, fruit that feels compressed, a finish that stops abruptly.
Signs a wine has passed its peak: a brown or brick-coloured rim, dried and stewed fruit character, sharpness where there should be structure, and a wine that collapses within twenty minutes of opening.
Keeping records
Anyone holding more than a dozen bottles should keep a simple list: wine, vintage, purchase date, quantity, and the year you intend to start drinking it. A spreadsheet is enough.
This is not fussiness. The most common way good wine is wasted is not heat or light. It is being forgotten at the back of a cupboard until it is fifteen years past its window, at which point the loss is complete and entirely preventable.
What to do with a bottle that has been stored badly
If you inherit wine, or find a forgotten case in a hot garage, do not assume it is ruined and do not assume it is fine. Check three things before opening. Look at the fill level in the neck, since a noticeably low fill in a young bottle suggests the seal has been compromised. Check whether the cork sits flush, because one pushed up against the capsule is a clear sign of heat damage. Hold the bottle to the light and look at the colour at the rim, where premature browning shows first.
If all three look normal, open it and drink it soon rather than returning it to storage. Wine that has been through heat stress may still be perfectly enjoyable now, but its remaining life has been shortened and further cellaring will not help it.
A realistic standard
Perfect storage is a laboratory condition and almost nobody has it. What actually matters is avoiding the four genuine faults: heat, temperature swings, direct light and vibration. A dark, still, reliably cool cupboard handles all four, costs nothing, and will look after a bottle for a decade. That is the whole of it.
